Today, I will share with you a tamilnadu style preparation of upma with tomatoes.
Note: To prepare this upma I have roasted the semolina first. You can also make the recipe without roasting the semolina.
1. In a frying pan, add 1 glass of semolina. Roast it to golden brown color and keep it aside.
2. Chop 2 tomatoes and 3 green chilies. Grate ½ the carrots and keep it aside.
Note: I have diced 1/4 carrots in this recipe, which actually is an optional step. In my opinion, it is better to grate the carrots.
3.In the same frying pan, add 2 tbsp of oil. To this add some mustard seeds and urad daal.
4.As the mustard seeds splutter, add the green chilies and 1 red chilly.
5.To this add grated carrots and stir it for 3 minutes. By this time, your carrots would have just started to become brownish.
6.To this add the chopped tomatoes. Stir it for 5 minutes. Add ¼ tbsp of hinge(asafetida) to it.Stir until, your tomatoes would have softened up and started loosing its water.
7.Add 2 glasses of water into the mix and let it boil for 5 minutes. Add 1tbsp of salt.
8.As the water gets boiled, add the roasted semolina into the mix and stir it well.Once the mix has solidified, add ½ tbsp ghee on top of the semolina and mix it well. Now, switch off the flame. Garnish with coriander leaves.
Note: make sure that you add the semolina in small batches so that it doesn’t form lumps.
9.In a frying pan, add ½ tbsp of ghee, to this add cashews and roast them. Add it on top of the semolina mix.
10.Take a slice of lemon pickle and serve the upma onto your plate. It is ready to be served.
