Okra Fry| Easy Ladies Finger Fry

Okra fry is a dry dish made by frying ladies finger with masala’s. Fried ladies fingers are really tasty and you can use any combination of masala’s to make it, it still will be tasty. 

The recipe, I am going to teach today is one where, we will fry the ladies finger with sambar masala, turmeric powder, mustard seeds and dry red chilies. This is a tamilnadu style dish, that my mom cooks in my home. 

It is an apt recipe especially if you are a beginner in cooking , and you are looking for a quick dry recipe to have along with your rice or roti. Let me show you how to make it. 

Prerequisites 

You would need a deep frying pan, vegetable oil (coconut oil if possible), sambar powder (ready made one from any shop).

Okra Fry - Preparation Steps

1. Wash the okras well, and dice them into small pieces.

2. In a deep frying pan, heat some coconut oil. Splutter mustard seeds, urad daal and 1 red chilly.

3. As the tempering gets to a golden brown color add the okra into the mix. Add some salt, turmeric powder and sambar powder and stir it.

4. Close the lid of the pan and keep a medium flame. Let the okras get cooked in the masalas for 5-10 minutes.

Note:

Make sure to give a gentle stirring to ensure that okras don’t stick to the bottom of the pan. 

5. When the okras are cooked, remove the lid and fry them in the open. Add 2 tbsp of oil and give an occasional stirring. Add 1/4 tbsp of hinge(asafetida) into the mix and stir it.

6. When the okras are well fried, golden brown in color stop the flame.Serve the okra fries with rice.

Cooking facts about Okra Fry

 When you close the lid of the pan while cooking okras, a sticky liquid will appear out of the okras. This is normal and it will go away once you fry the okras well.

This recipe goes very well with rice.

It is easy to prepare as it takes only 20 minutes to prepare it. 

It doesn't require many ingredients or doesn’t require you a lot of vegetables. So, it’s a perfect food to have when you are alone or want to cook for you and your friend.

• Okra – 300 gms.

• Mustard seeds – 1tbsp
