There are a few recipes, that always sticks close to our heart isnt it? Most likely, we would have interwined a story around our favorite recipes.Generally, this story will be about your childhood memories, your first time experience while tasting this recipe. 

For instance, one of my friends favorite recipe was tandoori chicken.When she had this recipe for the first time, she gorged onto the dish, buring her finger in the process trying to pick up a grilled piece from the pan.She still remembers that moment when she chewed that hot, spicy chicken piece in her mouth, how she madly gorged into the dish and burnt her finger. To this day,she still loves the dish. 

Likewise,in my case,my favorite recipe is paneer.When I think about this recipe, I go back to my school days.I think of those summer holidays when I would stay with my grandma in Cochin. Those fridays, when my uncle would come early from office and take me to a famous veg restaurant called BTH that used to serve so much tasty food. I still remember, how my mouth used to water, when they served those butter kulchas and paneer masala and how happy I felt after eating those buttery dishes. 

Today, as I thought of writing a recipe for paneer, I thought of sharing my story with you. Likewise, I would love to know your favorite recipe.What are your favorite memories? Now, coming back to our recipe here, this dish is called kadai paneer recipe.The speciality of this dish is that,it uses a frying pan (tawa) and is slighly spicy. It is really easy to make, especially if you have readymade paneer cubes with you. 

The main ingredients used for this recipe are paneer, capsicum and tomatoes.I have not used onions in this recipe. Many of my dishes, are going to be without onions atleast for a few months. But, don't let that stop you from adding onions if you like them in your recipe. 

So, shall we start? I am all exited... Here we go. 

Ingredients List (Serves: 3-4) 

For vegetables

  • Paneer Cubes – 500gms 
  • Tomato -3 or tomato puree – 250ml 
  • Capsicum – 2 (finely chopped)
  • Green Chilly – 3 
  • Red Chilly – 2-3 
  • Butter – 100gms 
  • Salt – 1-2 tbsp 
  • Ginger – 1 slice (crushed)

For Masalas

  • Coriander Seeds – 2 tbsp 
  • Cinnamon – ½ 
  • Cloves – 2 
  • Bayleaf – 1 
  • Cumin seeds – 1tbsp 
  • Turmeric powder – ½ tbsp 

Kadai Paneer Recipe Preparation Steps 

Part I – Prepare the masala 

1.Dry roast 2-3 red chilies, 2 tbsp coriander seeds, 1 cardamom, 2 cloves and ½ cinnamon in a pan. Roast them until the mix has turned golden brown. 


2.Grind them in a mixer into fine powder and keep them aside. 


Part II – Preparation of gravy 

3.In the same pan, heat about 4-5 tbsp of butter. Keep a low-medium flame as you do. As the butter starts melting add 1 bayleaf, 1 tbsp cumin seeds. 


4.As the seeds splutter, add in the crushed ginger into the mix and fry it well. 



Crush the ginger into fine paste. This gives you better taste, and the smell it gives while frying is really enticing. 

5.As the ginger is fried well, add in the chopped green chilies and bellpeppers into the mix. Fry it till, the bellpeppers lose moisture. Keep a medium flame as you do. 


6.Add the powdered masalas 1 tbsp of salt and ½ tbsp of turmeric powder into the mix and stir it well. 


7.Add the chopped tomatoes or tomato puree into the mix. Close the lid of the pan, and let the mix get cooked for about 5-10 min.



It is better to use real tomatoes instead of tomato puree. This is because, if you add too much purees, your dish ends up turning sour. 

8.Once the tomatoes have been cooked, and the gravy has become thick, add in the paneer cubes into the mix. 


9.Add ¼ tbsp of kasturimethi powder(dry fenugreek leaf powder) on top of the mix. Switch off the flame. Garnish your dish with chopped coriander leaves. Your spicy kadai paneer gravy is ready to be served.
