Gobi Manchurian| Cauliflower in Spicy Sauce Gravy


"Kids! For lunch, we will have gobi manchurian and fried rice" Our teacher remarked.

It was on a IX standard excursion trip to a theme park. All the boys were super thrilled. As thrilled as we were thinking about, leaving our school and enjoying in the wave pool, there was also an equal amount of hype on having gobi manchurian and fried rice probably for the first time.  

After the trip, I went home and was super exited about this dish I had, and asked mom if she would make it someday at home. Below are a few master class response I got. 

These sort of dishes tastes good only in restaurants. It won’t be that good if we make it

 “Its unhealthy to eat, you know. So much oil!!” 

Our body is meant to eat satvic foods” 

Now, if you are someone who says these kind of statements often, first off, I would agree with you. There is some truth around these facts and some genuine concerns regarding health.

But if,  you are just saying it because you think this dish is difficult to make, isn’t it better to accept that you don’t know how to make this dish and learn to make it, rather than break a kid’s heart with these statements?? 

So, today’s article is dedicated for those of you who don’t know how to make gobi manchurian recipe.It is also for those who want to learn to make this recipe. But before we start, we need few things to start off. 


To make gobi manchurian you need

Corn Flour

Maida/All purpose flour – (Tastes better with this) Or Besan/Chick Pea Flour 

Green Chili Sauce, Red Chili Sauce, Soya Sauce, Tomato Sauce

Spring Onions and Spring Onion Greens

In this recipe, you will play with these sauces to make the gravy. So make sure, you get them. 

Gobi Manchurian Preparation Steps 

Part I – Get ready with the vegetables 

1. Separate the individual florets of the cauliflower. Make sure, you make them as medium florets as shown.  Half boil the cauliflower florets and keep them aside.



I have added ½ tbsp of salt and ¼ tbsp of turmeric powder while boiling the cauliflower.

2. Dice 6-7 spring onions/2 onions into small pieces. Also dice 2 slice of ginger, 4 greenchilies, 5-6 garlic pieces.


Part II - Prepare the batter

3. In a vessel, add 1 cup of besan/maida, add 2-3 tbsp of corn flour and ginger garlic paste. Mix it well.



I have used Besan for this recipe. And as I didn’t have ginger garlic paste, I have crushed some ginger and garlic and added to the recipe.

4. To this add 1 tbsp of soya sauce, ½ tbsp salt and water. Add the florets into the mix.Note: Add water in batches. Each time ensure, that your batter is thick enough to coat the florets.

Part III - Fry the cauliflower florets


5. In a pan, add oil enough to deep fry the cauliflower florets. The best tip will be to add each florets in small batches of 5-6 pieces. So that, you won’t be wasting lot of oil.



If you really want a crisp, brown color, you can fry the gobi florets twice. This step is optional. 

Part IV - Prepare the manchurian sauce.

6. In a pan, heat oil. As the oil gets heated add chopped ginger and garlic. As the garlic starts turning brown, add in chopped green chilies and chopped stem of shallots.


7. Add the onions/shallots into the mix and fry it till the onions turn brown. Add  a ¼ tbsp of salt to the mix to fasten the browning process.


8. Add 2 tbsp of tomato ketchup, 2 tbsp of red chili sauce, 1 tbsp of soya sauce, 2 tbsp of green chli sauce, 1 tbsp of pepper powder and mix well.



Soya sauce, has a sour taste. So, don’t add too much of it. It is added to give that brown texture to your dish.

9. Add in water to the mix and let it boil for 5-10 minutes. Taste the gravy a bit to know if the sauces have settled down. During this time, I added ¼ tbsp of sugar to the mix, as sugar helps in this.


10. To this gravy add the fried gobi florets and mix it well. Add little water to the mix if the gravy has become very thick.


11. Garnish the gravy with chopped shallot stems. Enjoy your day with hot and spicy gobi manchurian dish.


This recipe, takes about 40-50 minutes to make it. And the ingredients listed here serves for 3 -4 people. It will be fun to cook this recipe with your friends.
